Those of us who love chilly winter weather are rejoicing this week as we pull out the hearty recipes. Our family loves a good roast and it’s easy to go from a slow cooked roast to homemade beef stew. With a few simple ingredients and you have homemade dinner.
INGREDIENTS
- 1 Medium roast
- 4 Large fresh potatoes diced
- 1 Canned sliced carrots (fresh if you prefer)
- 1 Sliced purple onion
- 2 packages of beef gravy
Heat oven to 250 degrees and move racks to the bottom of the oven. In a large pan with a lid place your roast, diced potatoes and carrots. Save the juice from the carrots and mix with a package of beef gravy. Set aside. Use 1 cup of water and mix with gravy packet. Pour over potatoes and carrots. Pour the carrot and gravy packet mix over the roast. Cover and cook for 4-5 hours until fork tender. Pull meat apart. Serve over white rice or with fresh corn bread.
