At Clean Eats Kitchen in Palm Coast, Joey and Jodee Soltes specialize in super healthy vegetarian and vegan dishes, and this holiday season they’re sharing a delicious gluten free side dish to add a little va-va-voom! to your table.
Butternut Squash Au Gratin (GF)
1 Butternut Squash
¼ cup butter or vegan butter if vegan
¼ cup gluten free bread crumbs
Salt and pepper to taste
¼ cup almond sliced
¼ cup dried cranberries
⅓ cup parmesan cheese or nutritional if vegan
¼ cup diced fresh basil Peel and thinly slice squash
Brush both sides of squash with melted butter. Roast squash at 325 degrees for 45 minutes. Cover with aluminum foil before baking. Uncover and coat squash with breadcrumb and cheese. Roast for another 10-15 minutes uncovered and then garnish before serving with almonds, cranberries and fresh basil.
