It’s Friday afternoon, you’ve been working all week long. The family needs dinner and you have to come up with something new otherwise it’s mac and cheese for the 100th time this year.

I’m sharing my Aunt Olleta’s broccoli casserole recipe with you. I’ve always liked it. If I’m honest, I love it.

It’s easy to make and easy to bake, and it sets up beautifully. If you’re a brownie fan, you know how the edges with the crust are the best part? This is the same way.

Above on the sticky note in the photo is her original recipe. For my own recipe, I substitute cream of chicken and mushroom soup in place of the cream of mushroom, and use fiesta cheese in place of sharp cheddar. As for the broccoli, I cut down two big heads of fresh broccoli. She used a bag of frozen broccoli.

If you’re stumped on a dish for a picnic or get together, or just tired of making pasta salad or potatoes for the family, give this a try. It’s pure southern comfort.
